Kendra, Scarlett and Gavin have their personal favorites, that’s why we will try wake up their picky appetites so they can eat more than the usual dishes. As a father who loves to cook, Doug will also share his cooking expertise on various meat recipes and different sauces.

Oat and Cheese Pancakes

Healthy breakfast ideasπŸ’‘

INGREDIENTS: • 1/2 cup gluten-free Old-Fashioned Rolled Oats
• 1/2 medium banana
• 1 tsp. baking powder
• 1/2 tsp. cinnamon powder
• 2 large egg whites • 1/4 cup cheese
• 1-2 Tbsps. unsweetened vanilla almond milk
• 2 tsps. unsaturated margarine, to grease the pan
• Optional add-ins: Fresh berries, chocolate chips, peanut butter

METHOD:
• Place all ingredients in a blender and blend until completely smooth for about 30 seconds.
• Lightly coat a large non-stick pan with 1/2 teaspoon margarine and heat over a medium to low flame.
• Drop batter by 1/4 cup onto the pan. Add desired toppings such as chocolate chips or blueberries.
• Cook until bubbles appear on top. Flip cakes and cook until golden brown on the other side.
• Wipe the pan clean and repeat with the remaining batter.

Jumbo Burgers

JUMBO BURGERS
Serves 6

INGREDIENTS:
•1 pound lean ground beef
•½ cup Quaker Quick Cooking or Old Fashioned Oats, uncooked
•1 egg, lightly beaten
•½ cup tomato sauce, salsa or BBQ sauce
•1 Tbsp. onion, finely chopped
•2 Tbsps. prepared mustard
•Salt and Pepper to taste
•6 Hamburger buns 

METHOD:

•In a large bowl, combine all the ingredients except the buns. 
•Mix the ingredients lightly but thoroughly and shape the meat into six - 3 inch patties.
•Broil or grill the patties in an oven for 4 – 6 minutes on each side at 160ºF, or until the center of each patty is not pink anymore.
•Serve each patty in a hamburger bun.

lasagna

My first attempt to make lasagna!:-) It doesn't look much but according to the kids and Doug it taste good.Phew! The kids really loved it especially because I put a lot of cheese! More practice for this mommy! Classic lasagna with our favorite @edencheeseph!❀ #TeamKramerPlateDate

Ingredients:

455 grams ground beef
1 tsp. dried basil
5 tbsps butter
1 can tomato sauce, 500g
1 can mushrooms, drained
4 cloves garlic, chopped
448 grams Lasagna noodles, cooked
3 1/2 cups  Eden Cheese, grated
1/4 cup all purpose flour
1 piece onion, chopped
2 packs all purpose cream
1 pc. beef broth cubes
Salt and Pepper to taste

Procedure:
1. For the red sauce: Saute ground beef on garlic and onion. Add in the beef broth cube and the tomato sauce.
For the white sauce: Melt the butter in a pan. Add the all purpse flour. Continually stir for 7 minutes or until golden brown. Add in the Eden cheese and mushrooms.
2. Spread a thin layer of red sauce on the baking pan. Top it with lasagna noodles, alternate it with the white sauce. Repeat until the pan is filled. Cover the pan with aluminum foil.
3. Bake in a 350 degrees Farenheit pre-heated oven for 45 minutes. Take the aluminum foil off and grate a cup of Kraft Eden MeltSarap on to. Bake again for another 15 minutes. Cool before serving.

*Chill  Eden cheese for easier grating.

Cookbook Collections

Some of my cookbook collections. I really use these cookbooks as reference for feeding my kids... Its a challenge to feed 3 kids with different taste palate. Till this very day I am still figuring out what meals they love to eat and in hopes that I can prepare it the healthiest way possible. I wonder how my mom did it back then? I don't remember ever saying no to what she prepared for us. Anyhoo, speaking of my mom, she is obsessed with laminating recipes from magazines and old torn out cookbooks. If you notice I have a pile there of laminated recipes, that's all from my mother who can do that forever... She is the laminating Queen. Tiyag talaga! Thanks mom!!!😘

Scrambled Egg with Tomato Cheese Sauce

Ingredients:

2 teaspoons oil
8 ounces tomato sauce
4 large eggs
Salt and pepper to taste
Grated cheese
Chopped fresh parsley for garnish

Procedure:

Heat oil in an 8-inch nonstick or cast iron skillet. Add tomato sauce and cook, stirring frequently, over medium-high heat until bubbling.

While tomato sauce is heating, break eggs into a mixing bowl, and whisk until blended. Pour eggs over the tomato sauce and stir until eggs are cooked. Serve hot over toasted slices of bread.

Halaan Recipe

Ingredients:

1 lb. shell clams (packaged)
1 bunch fresh spinach, washed and drained
1 medium yellow onion, sliced
1 thumb ginger, julienned
3 cups water
Salt and freshly ground black pepper to taste

Procedure: 

1. Boil the water in a stockpot.
2. Add the ginger and onion. Cover and continue to boil in medium heat for 3 to 5 minutes.
3. Stir-in the clams. Simmer for 5 to 10 minutes.
4. Add-in the spinach. Cover and cook for a minute more.
5. Sprinkle some salt and freshly ground black pepper to taste.
6. Transfer to a serving bowl.
7. Serve with Kalabasa, Sitaw and Galunggong. Share and enjoy!

Malunggay Corn soup and Fish Cake Sitaw

MALUNGGAY CORN SOUP

2 cups white corn, shredded
1 small onion, chopped
1 glove garlic, minced
1 pc small patola sliced
3 cups water
Salt and pepper to taste
1 cup malunggay leaves
Cooking oil.
 
Procedure:

1. Saute the garlic and onion.
2. Add water and bring to a boil.
3. Add the shredded corn and continuously stir until cooked.
4. Add salt and pepper to taste.
5. When cooked, add patola and malunggay leaves.
6. Simmer for few more minutes until patola is tender.

FISH CAKE

1 lb boneless fish fillet
5 large potatoes
3 tablespoons chopped onions
2 eggs
1 tablespoon water
salt and pepper


Procedure:

Peel and cut up potatoes.
Place in pot with fillets and cover with cold water.
Boil until the potatoes are"fork done".
Drain off the water.
Mash the potatoes and fish together.
Mix chopped onion, eggs, and 1 tablespoon water.
Add this to the fish and potatoes and mix well.
Form the mixture into hamburger size patties.
Season with salt and pepper and fry in well greased skillet until golden brown on both sides.

Camote Chips

CAMOTE CHIPS 

2-3 large camote (sweet potatoes), peeled and cut into very thin slices
4 cups iced water
oil for deep frying
sugar for dusting

Procedure:

1. Soak the sliced camote in iced water for at least 30 minutes. Drain and allow to dry on paper towels.
2. Heat the oil in a frying pan. Deep fry the camote until crisp and golden yellow.
3. Drain on paper towels. Dust with sugar before serving.

Gluten-Free Cookies

Getting ready for tomorrows playdate at home with Kendra's classmates.😊 She is so excited! This is a first for her to have friends from school over. Baked from scratch gluten-free cookies.πŸͺ  #TeamKramerPlateDate


Ingredients:

cup packed brown sugar
3/4  cup granulated sugar
1  cup butter, softened
1 1/2  teaspoons gluten-free vanilla
2  eggs
2 1/2  cups All-Purpose Gluten Free Rice Flour Blend
2  teaspoons xanthan gum
1  teaspoon gluten-free baking powder
1 teaspoon baking soda 
1/2  teaspoon salt
1  bag (12 oz) semisweet chocolate chips (2 cups)


Procedure:

1. Heat oven to 375°F. In large bowl, beat sugars, butter and vanilla with electric mixer on low speed, or mix with spoon, until well blended. Beat in eggs until light and fluffy.
2. In medium bowl, stir rice flour, xanthan gum, baking powder, baking soda and salt until thoroughly blended. Stir flour mixture into butter mixture. Stir in chocolate chips.
3. On ungreased cookie sheets, drop dough by tablespoonfuls about 2 inches apart.
4. Bake 7 to 9 minutes or until light brown (centers will be soft). Cool 1 to 2 minutes; remove from cookie sheets to cooling racks. Store in tightly covered container.

Banana Heart Burgers

Puso Ng Saging Burgers in other words Banana Heart Burgers

Ingredients

1 Medium Banana heart,
1 Onion,
1 Clove of garlic,
2 Eggs,
2 table spoon of white flour, (or atleast when you see its already thick.)
3 Pinches of salt
Small pack tomato sauce
3 pinches of pepper
Mix all together.

Peel the red leaves off the heart
Slice thinly
Mix all the ingredients together.

Cook!

SPLIT PEA AND RICE

I know how difficult it is for moms to feed their picky eaters. I myself have a selective eater in Kendra. That is why I am always in constant search for the best, yummiest and of course healthy recipe books for kids. I found one and tried it out! And my kids love it...Yes, even picky Kendra. Sharing you the recipe book later. :-) Split Pea and rice (I took out the beef)

1/4 cup dried green peas (quick cooking)
1 Tablespoon vegtable oil
1piece white onion chopped
1clove garlic, minced
1/2 cup carrots cut in very small cubes
1/4 cup celery,peeled and cut into very small cubes
1/3 cup leeks, sliced thinly on bias
1/4 cup leab ground beef
2 cups cooked rice (brown or black rice or combo. Your choice.)
1/3 cup fresh spinach or kangkong leaves finely chopped 
3tablespoons oyster sauce. 
Dash of salt and pepper

Cooking steps
1. Pre-Cook Thr Split Peas: In a small pot of boiling water, coom the split peas for about 10 minutes or until thr split peas are tender to the bite. Drain and set aside.

2.COOK THE RICE: In a a wok pan (or any that you have at home just asling as it can hold the amount of rice you have on the pan.) heat the vegtable oil. Saute the onion, garlic, carrots, celery, and leeks altogether until softened, about 1 1/2 minutes. You can add ground beef. If you choose to add ground beef. Continue sauteing until beef is no longer pink. Next, add the oyster sauce and immediately add rice and split peas. Toss and mix until rice and split peas are well coated with oyster sauce. Add in the spinach last and turn off the heat. Season lightly with a dash of salt and pepper. Serve warm.

There yah go Moms! :-) I am no expert when it comes to cooking but I'll try anything for my kids. I would really love to see what other moms serve their kids especially the picky ones.
